Original Chicken Cordon Bleu

When I made this dish recently, I couldn’t believe that for more than 60 years, this classic French dish has been revered as a supreme centerpiece. It’s not an easy chicken dish to tackle, but this recipe — which calls for chicken thighs, not breasts — works out well. I remember how nervous I was when I first picked up this recipe. My fingers curled under the narrow breast bones and made me worried that my kids wouldn’t be able to stuff the breast meat.

It turned out that my worry was justified. The breast meat can easily go to waste.

As for my worries about sticking the breast meat into the crock pot, I had no problems, and I was inspired to convert the recipe to use chicken thighs and thighs the next time around. It’s delicious.

  • 6 chicken thighs
  • 1 ½ cups buttermilk
  • 2 medium carrots, sliced

To taste ground nutmeg

  1. In a crock pot, cover the chicken with the buttermilk, carrots, onion, thyme, bay leaves, salt, and pepper. Cook on low heat for an hour. The flavors deepen.
