Minty yogurt chutney is an undeniably tasty sweet. “It reminds me of summer,” says Bellarie.
Ingredients
:
- 4 tablespoons butter
- 1/2 cup onion, finely chopped
- 1 1/2 cups onion, finely chopped
- 1 1/2 cups white wine
- 1 cup white wine vinegar
- 1 cup fresh tomato juice
- 1/2 cup olive oil
- 1 clove garlic, minced
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups yogurt
- 4 teaspoons mint leaves

1/2 cup cashews, toasted
Directions:
- In a large saucepan, heat butter over medium heat. Add onion and sauté until soft. Add onion and sauté until tender.
- Add wine, vinegar, tomato juice, olive oil, spices, and salt. Cook until mixture boils, then reduce heat to low.
- Pour in yogurt and reduce heat to low. Let simmer over low heat, uncovered, for approximately 1-1/2 hours.
- Add mint and cashews and simmer for 30 minutes. Serve warm.
