Join the Broth! Grilled Arctic Char With Horseradish Crema
Ingredients
- 1 Arctic Char or an extra large salmon fillet
- 2 Tbs. mustard seeds
- 1 Tbs. cumin seeds
- 1/4 tsp. salt
- 1/2 tsp. white pepper
- 1 Tbs. fresh thyme leaves, crushed
- 1 tsp. Dijon mustard
- 2 Tbs. unsalted butter
- 2 Tbs. olive oil
- 1 baguette

1 oz. Horseradish Crema (optional)
Directions
- For the mustard seed seasoning: In a mortar and pestle combine mustard seeds, cumin seeds, salt, white pepper, and thyme and grind. Mix in Dijon mustard.
- For the butter and oil: Combine olive oil and butter in a large sauté pan. Heat over medium-high heat. Once the butter is melted add the salmon and cook on each side about 3 minutes. Remove from heat and add horseradish crema to the pan.
- To assemble: Remove the salmon from the pan. Slice the baguette lengthwise in half crosswise. Place the pieces on the sandwich and brush generously with butter.
