Designed by Michael Clarke, Eleven Madison Park Granola
Beautiful, nicely sized, not too sweet. Because breakfast should start at nine.
Serves 4-6
Ingredients
- 1/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 2/3 cup almond milk
- 1/4 teaspoon cinnamon
- 3/4 teaspoon salt
- 2/3 cup mixed seeds
- 1/4 cup wheat germ
- 1/4 cup pumpkin seeds
- 2 tablespoons apple cider vinegar

4 tablespoons unsalted butter, melted
Directions

- Combine the sugar, both sugars, almond milk, cinnamon, salt, and seeds in a medium saucepan. Bring to a boil.

- Reduce heat and simmer, stirring occasionally, until the seeds are a bit crispy and the granulated sugar is fully absorbed.

- Add the vinegar and butter and continue cooking, stirring occasionally, until the mixture is thick and syrupy. Taste and adjust the seasoning. (You can also take it off the heat right away, and it will be served hot, but we’re confident it will still be tasty.)

- Slice and serve the granola with a cold cup of coffee (or tea) and some fresh fruit — we are fans of banana peels and chopped strawberries — and a slice of crusty, unsalted bread.
