Salmon With Smoked Salmon Butter

Ingredients

:

  • 6 eggs, at room temperature
  • 1 teaspoon freshly ground black pepper
  • 1 ounce smoked salmon, finely diced
  • 2 teaspoons cream cheese, at room temperature
  • 2 teaspoons finely chopped chives

Zest of 1 lemon

  • 3 tablespoons butter, at room temperature
  • 2 tablespoons minced fennel

Sea salt, freshly ground black pepper, and extra virgin olive oil, to taste

Directions:

  1. In a small bowl, stir together eggs, pepper, and smoked salmon until combined. In a small saucepan, cook cream cheese in butter until soft, then whisk into egg mixture.
  2. Stir in chives, lemon zest, and fennel, a generous 1 teaspoon sea salt, and enough pepper to taste. Garnish with fresh lemon wedges and a garnish of feta or crumbled feta.
