Ingredients
:
- 6 eggs, at room temperature
- 1 teaspoon freshly ground black pepper
- 1 ounce smoked salmon, finely diced
- 2 teaspoons cream cheese, at room temperature
- 2 teaspoons finely chopped chives
Zest of 1 lemon
- 3 tablespoons butter, at room temperature
- 2 tablespoons minced fennel
Sea salt, freshly ground black pepper, and extra virgin olive oil, to taste
Directions:
- In a small bowl, stir together eggs, pepper, and smoked salmon until combined. In a small saucepan, cook cream cheese in butter until soft, then whisk into egg mixture.
- Stir in chives, lemon zest, and fennel, a generous 1 teaspoon sea salt, and enough pepper to taste. Garnish with fresh lemon wedges and a garnish of feta or crumbled feta.
