Join the Broth! Grilled Arctic Char With Horseradish Crema

Ingredients

  • 1 Arctic Char or an extra large salmon fillet
  • 2 Tbs. mustard seeds
  • 1 Tbs. cumin seeds
  • 1/4 tsp. salt
  • 1/2 tsp. white pepper
  • 1 Tbs. fresh thyme leaves, crushed
  • 1 tsp. Dijon mustard
  • 2 Tbs. unsalted butter
  • 2 Tbs. olive oil
  • 1 baguette
  • 1 oz. Horseradish Crema (optional)

    Directions

  • For the mustard seed seasoning: In a mortar and pestle combine mustard seeds, cumin seeds, salt, white pepper, and thyme and grind. Mix in Dijon mustard.
  • For the butter and oil: Combine olive oil and butter in a large sauté pan. Heat over medium-high heat. Once the butter is melted add the salmon and cook on each side about 3 minutes. Remove from heat and add horseradish crema to the pan.
  • To assemble: Remove the salmon from the pan. Slice the baguette lengthwise in half crosswise. Place the pieces on the sandwich and brush generously with butter.
