Ingredients
- 4 salmon fillets (approximately 2 pounds each)
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1 tablespoon fresh minced cilantro leaves
- 1 tablespoon Sriracha sauce
- 2 tablespoons fresh lime juice
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper

1 small red onion, diced (about 1/2 cup)

- Preheat the oven to 425 degrees F. Pat the salmon dry.

- Heat a small sauté pan over medium heat. Add the olive oil and stir. When the oil is almost a rich red color, add the garlic and cook for a few seconds, then add the tomatoes and any juice from the sauce. Cook for another 3 to 4 minutes, stirring constantly. Add the cilantro, Sriracha, lime juice, and salt.

- Add the chopped onion and cook for about 3 minutes, until the onion is translucent. Stir the mixture into the tomato mixture. Turn the heat to low and let simmer for a few minutes. Stir in the herb mix.

- Put the salmon on a cookie sheet. Place the baking sheet in the oven and bake for 6 to 8 minutes, or until the salmon is cooked through and cooked through.

- Remove the baking sheet from the oven and let the salmon rest for about 5 minutes before serving. Garnish with the remaining lime juice and cilantro.
