Avocado With Soy-Lime Vinaigrette

If you’re trying to eat healthy but can’t afford to swap a cheat day of french fries for a multivitamin, that can be a problem. However, there are plenty of healthy options available on your plate without breaking the bank.

You can choose from high-quality avocados (yes, you have a better chance of taking a pill and getting nutrients than drinking a mimosa or another calorie-filled cocktail) in many easy and delicious ways. This vinaigrette is an elegant and simple spread. It’s creamy without being heavy or oily. Of course, it’s also nutritional, with fewer calories than a martini. So go grab that tray of real-deal avocados and start savoring life’s little pleasures.

Ingredients

  • 4 small avocados, pitted and peeled
  • 1/4 cup soy sauce
  • 1 teaspoon agave
  • 1 teaspoon lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon ground jalapeño
  • 1 tablespoon sesame oil
  • 2 teaspoons vegetable oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

    Directions

  • Toss together the remaining ingredients.
  • Pour the dressing over the avocado and fold. You can serve the avocado spread on whole-grain toast or in a spring roll.
